Don Ricardo undertook the conversion of the family cattle farm into a Finca 100% dedicated to coffee exactly 35 years ago. Throughout the ups and downs of the coffee sector in Mexico, Ricardo has continued to invest in the development of the farm and its infrastructure. Finca Nuevo Mexico is today one of the most modern and innovative fincas in Chiapas, in terms of coffee processing capacity and in terms of environmental impact. The farm is certified Rain Forrest Alliance and supplies 100% of its energy requirements from renewable source.
The unique process used for this particular coffee involves taking perfectly ripe cherries of Anacafé 14 which are then carefully collected and sorted at the Finca's washing station. Cherries are then rested for 24 hours in sealed tanks, pulped without water and fermented again in anaerobic tanks for another 48 hours. Coffee is then washed and dried in the farms' open air patios during 10 days.

Whole bean – for those with a grinder.
Coarse – for making in a cafetiere.
Medium – for pour over/ drip
Fine – for espresso and aeropress.
